Bella Cucina's Pork Chops with Cranberry Reduction

Never know what to do with Holiday leftovers? Here, leftover Cranberry Sauce (fresh or canned) and Boneless Pork Loin Chops make a savory and easy entrée! Freshen up leftover mashed White or Sweet Potatoes by stirring in a little Orange Zest. A fresh Green Salad with my Apple-Cider Vinaigrette is a perfect compliment to this simple meal! This recipe serves two.

Ingredients:

  • 1 Tablespoon of Butter
  • 2 5- to 6-ounce Boneless Pork Loin Chops
  • 1/3 Cup of Dry White Wine
  • 1/3 Cup Cranberry Sauce
  • 3 Scallions, chopped
  • 1 Tablespoon fresh Thyme, chopped


Preparations:
  1. Melt Butter in heavy medium skillet over medium heat. Sprinkle Pork Chops with Salt & Pepper. Sauté Pork Chops until browned and cooked through, about 5 minutes per side. Transfer Pork Chops to plate, cover with foil.
  2. Add Wine to same skillet. Bring to simmer, scraping up browned bits in bottom of pan. Stir in remaining ingredients. Reduce heat to medium-low and simmer until slightly reduced, stirring occasionally, about 3 minutes.
  3. Season Sauce with Salt & Pepper. Return Pork and any juices to skillet. Cook until heated through, about 1 minute.
  4. Transfer Pork Chops to plates. Spoon Sauce over and serve.
