Bella Cucina's Chicken Pot Pies With Puff Pastry

When the weather turns cool, most people want to gather into the warmth of their homes & kitchens to enjoy comfort foods. This recipe for Chicken Pot Pie is easy to prepare and full of nutritious fresh vegetables and herbs. It will warm and satisfy your souls. This recipe serves four.

Ingredients**:

  • Half of 11.3-oz. package frozen Puff Pastry, thawed
  • 1-Pound Boneless, Skinless Chicken Breasts, cut into 1-inch pieces.
  • 1/2 teaspoon Salt & freshly ground Pepper
  • 1-Tablespoon Olive Oil
  • 1-14 oz. can Chicken Broth
  • 1/2 Cup Dry White Wine
  • 2 medium sized Red Skinned Potatoes, cut into 1/2-inch cubes
  • 1 Cup of Baby Carrots, cut in half lengthwise
  • 8 oz. Green Beans, trimmed & cut into bite-sized pieces
  • 2-Tablespoon Flour
  • 1 teaspoon fresh Thyme leaves
  • 1-Cup Heavy Cream.


Preparations:
  1. Preheat oven to 400-degrees. Cut out rounds from Puff Pastry to fit tops of four 1 1/2 –cup-baking dishes or ramekins; place on a baking sheet and bake crusts until well browned, about 12 minutes.
  2. Sprinkle Chicken w/Salt & Pepper. Heat Olive Oil in a large skillet over medium heat; add Chicken pieces and sauté, stirring often until Chicken is browned. Add Flour and cook, stirring for 1 minute.
  3. Stir in Chicken Broth & White Wine; cook until mixture thickens & boils. Add Veggies and Thyme; cover and cook on medium-low until tender, about 10 minutes. Stir in Cream and simmer for 5 minutes.
  4. Transfer Chicken mixture to baking dishes; top with Puff Pastry and serve immediately.


**For an even quicker version of this recipe, replace fresh veggies with a small package of frozen Mixed Vegetables. Follow the recipe for the frozen mixed vegetables the same as above.
