Lemon-Basil Butter

Compound Butters, or the French term, "Beurre Composé", are an excellent way of "dressing up" Fish Fillets, Chicken, Pasta or Toasted Baguettes. This recipe presents just one combination of Herbs and flavors. With any fresh Herbs on hand, such as Parsley, Chives, Oregano, etc., you can easily prepare a variety of compound Butters, according to your taste. Don’t forget to add Spices, too, to build layers of flavors! This recipe makes 1/2 cup of Compound Butter.

Ingredients:

  • 4 Ounces of Butter (1 stick, Unsalted preferred), at room temperature. Butter should not be too soft.
  • Zest of one fresh Lemon
  • 6 leaves of fresh Basil, finely chopped
  • 1/4 teaspoon of Salt
  • 1/4 teaspoon of fresh ground Black Pepper


Preparations:
  1. In a large bowl, using a wooden spoon, mix together all ingredients. If Butter is too soft to mold, place in refrigerator for about 20 minutes, until pliable.
  2. Place the mixture on a piece of parchment paper or plastic wrap. Pull wrap to form a roll and twist the ends.
  3. Place in the freezer for 10 minutes to set up
  4. Unwrap and slice into 1/4-inch rounds. Place on top of cooked Meats, Fish, Pasta or Bread.
