Grilled Chicken Caprese Salad
Grilled Herbed Chicken Breasts are thinly sliced and served over a bed of Baby Greens with fresh Tomatoes, Basil and Mozzarella Cheese. Drizzled with Olive Oil and Balsamic Vinegar. This recipe makes 2 servings.
Ingredients:
- 2 Boneless, Skinless Chicken Breasts
- Fresh Herbs, such as Thyme, Rosemary, or Oregano, chopped
- Mixed Baby Greens
- 2 Large Tomatoes, Heirloom Varieties are best
- 1 Several leaves of Fresh Basil
- 4-6 Ounces of Fresh Mozzarella Balls
- Extra Virgin Olive Oil
- Balsamic Vinegar (Use a good quality vinegar for this recipe)
- Salt & Pepper
Preparations:
- Wash and pat dry Chicken Breasts. Rub Chicken with a little Olive Oil. Sprinkle Chicken with fresh Herbs, cover with plastic wrap. Let Chicken marinate for at least 20 minutes, or up to 2 hours.
- After Chicken has marinated, grill over medium heat, depending on the thickness of the Chicken, until cooked through. Let Chicken rest 5 minutes, and then thinly slice.
- Divide the mixed Baby Greens onto two plates. Slice the Tomatoes and Mozzarella and place them on top of the Greens. Alternate a fresh Basil leaf between the Tomato slices. Top with sliced Chicken. Drizzle Extra Virgin Olive Oil and Balsamic Vinegar over the salad. Season with Salt & Pepper.
