Fresh Corn Ragu w/ Tomatoes

This Corn side dish is especially delicious using the freshest summer Corn and Tomatoes available. To slim down on fat/calories, eliminate the Pancetta and Whipping Cream from this recipe, it will be just as wonderful! Makes four servings.

Ingredients:

  • 1 Teaspoon of Olive Oil
  • 1 Thick Slice of Pancetta, or Bacon
  • 2 Large Ears of Fresh Corn, cut off cobb
  • 1 Shallot, minced
  • 12 Cherry/Pear Tomatoes, cut in half if large
  • 1 Jalapeno, seeded, minced; opt.
  • 1/2 Cup Whipping Cream


Preparations:
  1. Chop and sauté Pancetta/Bacon in a teaspoon of Olive Oil until golden brown, drain on paper towel.
  2. In remaining oil, sauté Shallot for 2-3 minutes, until lightly browned. Add Corn and sauté until just golden. If using Jalapeno, add and sauté 1 minute. Toss in Tomatoes, then add Whipping Cream. Heat until just warmed.
