Dried Cherry-Port Reduction
This lovely sauce is both sweet and savory and goes well with Chicken or Pork! This recipe makes approximately 1/2 cup of Sauce.
Ingredients:
- 1 teaspoon Vegetable Oil
- 1 small Onion, diced (about 1/2 Cup)
- 2/3 Cup Ruby Port
- 1/2 Cup of Dried Cherries or Dried Cranberries
- 2 Tablespoons of Orange Marmalade
- 2 Tablespoons of Butter
- Salt & Pepper, to taste
Preparations:
- In a small saucepan, sauté Onions in Vegetable Oil until softened.
- Add Port & Cherries to Onion mixture and simmer over low heat until mixture is slightly thickened and reduced to 1/3 cup, about 4-6 minutes.
- Off heat, mix in Marmalade and Butter, one piece at a time. Adjust seasoning with Salt & Pepper.
