Dried Cherry-Port Reduction

This lovely sauce is both sweet and savory and goes well with Chicken or Pork! This recipe makes approximately 1/2 cup of Sauce.

Ingredients:

  • 1 teaspoon Vegetable Oil
  • 1 small Onion, diced (about 1/2 Cup)
  • 2/3 Cup Ruby Port
  • 1/2 Cup of Dried Cherries or Dried Cranberries
  • 2 Tablespoons of Orange Marmalade
  • 2 Tablespoons of Butter
  • Salt & Pepper, to taste


Preparations:
  1. In a small saucepan, sauté Onions in Vegetable Oil until softened.
  2. Add Port & Cherries to Onion mixture and simmer over low heat until mixture is slightly thickened and reduced to 1/3 cup, about 4-6 minutes.
  3. Off heat, mix in Marmalade and Butter, one piece at a time. Adjust seasoning with Salt & Pepper.
